THE BEST PALEO PANKCAKES EVER (aka Bunny Crack Pancakes)
If you love pancakes but you hate the heavy, bloated feeling you get after eating what is basically a bomb of what and gluten, you will LOVE these pancakes which I call "Bunny Crack Pancakes". Why Bunny Crack? These pancakes are fully loaded with carrot cake spices, 3 carrots, and 2 bananas, then topped with a coconut-peanut butter-maple drizzle. As you saw in my previous post, it's really important for gut health to both eliminate gluten from the diet, and also add more vegetables and whole foods. These pancakes are made with paleo pancake mix from Birch Benders and won't weigh you down, I promise!

I always recommend that all meals should include a healthy balance of good fats, good carbohydrates, fiber, and protein, and these definitely fit the bill.
To make the pancakes I used the Birch mix as the base combined with 1/2T ground ginger, 1/2tsp cinnamon, 1/4tsp nutmeg, 3 steamed/mashed carrots and 2 mashed bananas (the riper the better). Griddled those babies up with some melted coconut oil on your griddle, and then drizzled with 1T of coconut oil melted together with 1T of maple syrup, and 1T of peanut butter (I love Justin's and also Nutzo).
I topped these with spiced pecans from Trader Joe's for extra spice flavor, but chopped walnuts are great too if you are not a fan of sweet n spicy nuts.
These pancakes will give you just the fuel you need for all of your weekend activities (but they're also pretty great for a lazy Sunday too).
NOTE: I get the best and most consistent cooking finish when I use my cast iron griddle like this one.
WHAT YOU'LL NEED (Makes 2 servings):
- 3/4C Birch Benders Paleo Pancake Mix + 2/3C Water
- 3 carrots steamed and then mashed
- 2 rip bananas mashed
- 1/2T ground ginger
- 1/2tsp. cinnamon
- 1/4tsp. nutmeg
- 1/4C chopped sweet n spicy pecans (I buy Trader Joes's brand) or other chopped nuts.
- Coconut oil for the pan or griddle
Coconut-Maple-Peanut Butter Drizzle
- 1T peanut butter
- 1T coconut oil
- 1T REAL maple syrup
Heat a stovetop griddle or cast iron skillet. While that's heating, melt some coconut oil (about 2 T) and set aside. Combine all of the ingredients for the drizzle in a small glass bowl and microwave for 1 minute. Stir, microwave for 30 seconds more, and then set aside.
In a larger bowl, combine all of the pancake ingredients together until well combined.
Once the griddle is hot, brush with the melted coconut oil, and then make pancakes according to the directions on the Birch Benders packaging. Set the pancakes aside on a large plate as you finish off the batter.
Once you've finished making all of your pancakes, stack 'em high with nuts and the maple drizzle between each layer. Now step back and enjoy your beautiful stack of pancakes! And then eat them IMMEDIATELY because they are too good to wait!
