NON-DAIRY ‘MILK & COOKIES’ PROTEIN ENERGY BITES

I don’t know about you guys, but I’ve been spotting a trend on Instagram lately. Lower sugar, paleo/keto-friendly cookie doughs! I’ve been dreaming about my own iteration of this, and when I received the Vital Proteins Vanilla Collagen Creamer I realized I finally had the perfect tool for my own unique twist on this idea.

GRAIN-FREE, DAIRY-FREE MILK & COOKIE PROTEIN ENERGY BITES!

By using a combination of low-sugar, paleo-friendly Rootz Nutrition Protein Superfood, peanut butter and coconut flour, the balls were dense and slightly sweet, just the way you’d want cookie dough to be. And adding the Collagen Creamer gave them a creamier taste, as if you’re dunking cookies in milk! I opted for Rootz Nutrition’s paleo-friendly protein blend which contains egg white protein, hemp protein, and sacha inchi protein, combined with a blend of all natural superfoods because it's high in protein, low in sugar, and aids muscle recovery after a workout.

I kept these low sugar by using the Rootz Nutrition Protein Superfood, a low sugar Peanut Butter, stevia-sweetened Lily’s Dark Chocolate Chips, and added just a touch of sweetness by using my favorite Lakanto Monk Fruit maple-flavored syrup. These are not vegan as they contain collagen and egg white powder, but they are 100% grain free and high in fat, making them perfect for Paleo and Ketogenic Diets!

I kept this batch unadorned, but you can certainly melt a bar of Eating Evolved chocolate (my favorite) and drizzle these for extra chocolate power. Needless to say, this batch didn’t last long, but luckily once all of the ingredients are measured out, they are a cinch to make and you’ll have a batch of cookie dough balls in about 10 minutes.

WHAT YOU’LL NEED:

- 3/4C Low-sugar or no-sugar Peanut Butter (I used Everland Natural Foods with amazing results but I got it at Marshall's. I recommend Justin's which is more widely available).

- 1/2C Coconut Flour

- 2 Scoops of Roots Nutrition Chocolate-Banana-Nut Protein Superfood (get 10% off your order with the code RHROOTZ)

- 1/4C Vital Proteins Vanilla Collagen Creamer

- 1/3C Lily’s Stevia Sweetened Chocolate Chips

- 1/2T Lakanto Maple-Flavored Syrup

- 2T Root & Bones Wild-Crafted Pine Pollen (use the code RH15 for 15% site-wide!)

- 2T Maca (I love Navitas gelatinized)

- (optional) Eating Evolved chocolate bar to melt and drizzle 

LET’S DO THIS:

Combine all ingredients EXCEPT FOR the chocolate chips in a food processor (like this one) and pulse until all ingredients are evenly combined. Add the chocolate chips and pulse again until evenly distributed. You may need to give the mixture a couple of stirs with a spoon to evenly distribute.

Form into 1” balls and store in tupperware in the refrigerator.

This recipe will make approximately 1 dozen.
